    1 onion purple
    1 red bell pepper, finely chopped
    3 slices bacon
    2 cans (16 ounces each) black-eyed peas, drained
    1 cup cooked ham
    1 / 4 c. Teaspoon cayenne pepper
    1 / 4 cup vinegar
    3 tablespoons sugar in the cup
    3 cups hot cooked rice
    Salt to taste
    1 / 4 cup fresh spinach, finely chopped

    In a large saucepan, cook bacon crisp, crumble and return to pot. Sauté onion and bell pepper until tender. Stir in black-eyed peas, rolled ham, peppers, sugar and vinegar. Simmer 10 minutes, stir the cooked rice in water, salt and pepper and spinach. Serve hot.
